Suntory Yamazaki Distillery: Japan's Whisky Pioneer
"Suntory Yamazaki Distillery" is Japan's first malt whisky distillery. Japanese whisky, now recognized worldwide, has recently become a regular recipient of numerous awards both domestically and internationally.
In 1923, Shinjiro Torii, the founder of Suntory, was committed to creating a domestic whisky that was not an import. He began construction of Japan's first malt whisky distillery in Yamazaki. Since then, the journey of the Yamazaki Distillery has shaped the history of Japanese whisky, producing many famous liquors, including the single malt whisky Yamazaki.
The Yamazaki area in the northernmost part of Osaka has been famous as a place of excellent water since ancient times, so much so that the tea master Sen no Rikyu established a tea room there. The unique terrain where the Uji River, Kizu River, and Katsura River converge creates a moderately humid climate. This high-quality water and humid environment are said to be an ideal place for whisky making.
The characteristic of whisky making at the "Suntory Yamazaki Distillery" is the unparalleled variety of original liquors. For example, the use of wooden and stainless steel fermentation tanks in the fermentation process, the use of different sizes and shapes of distillation pots in the distillation process, and the use of various barrels in the storage (maturation) process.
